Every pizzeria in America has a pepperoni pie. Only New Haven has the white clam, and we would argue that is the correct balance of power.

What is on it

Shucked littleneck clams, sliced garlic, olive oil, chopped parsley, and lemon. That is the whole list. No tomato, no mozzarella, no hiding. When people ask where the cheese is, we tell them the clams already brought the salt and the sea.

Why it works over coal

Clams need fierce, fast heat. Our oven sears them in minutes, so they stay plump and briny instead of steaming into rubber. The garlic crisps at the edges, the lemon goes on after the bake, and the charred crust soaks up the clam liquor. That last part is the reason people close their eyes.

A word of warning

We shuck to order, and on Fridays and Saturdays we sell out. If your heart is set on the white clam, call ahead or come early. Nobody wants to watch the table next to them eat the pie you dreamed about.
